This tasty recipe can be enjoyed by anyone, but is especially suitable for Breast Cancer Haven visitors on our weight management programme.

You can serve this as your protein at lunch or dinner. Because I also recommend you include the equivalent of half a tin of pulses daily to ensure you are getting enough fibre, you could actually eat the whole lot!  This fat free version makes sure you get enough protein and fibre, but without also taking in too much fat. You can then have 28g nuts as your fat.

Serve with 3 portions of crudites or piled on a salad.

  1. Drain 1 can of chickpeas.
  2. Add chickpeas to the blender along with:
  • 1/8 cup veg stock
  • 3 garlic cloves
  • 1 or 2 lemons, juiced
  • 1/2 tsp salt
  • 1/4 tsp paprika
  • 1 tsp cumin

     3. Blend on high for 2 minutes. You want the hummus to be very creamy and fluffy.
     4. Place in an airtight container and store in the fridge for up to one week.
